Cornichons

Cornichons have similarities to Gherkins, since cornichons are gherkins that are harvested when they are still young and only a few inches long. That’s why cornichons are smaller in size, tougher and rougher in texture. They are tart in flavour with a subtle sweetness. Cornichons are perfect to be paired with rich and salty dishes to freshen up the palate with their flavour profile.
